Paneer and Broccoli Curry

Paneer and Broccoli Curry is a delicious Indian dish combining traditional ingredients in a flavorful and savory sauce. The creamy texture of the paneer cheese pairs nicely with the crunchy texture of the broccoli, while the fragrant spices add an extra layer of depth and complexity.

INGREDIENTS

1 onion; 2 cloves garlic; 2 tbsp garam masala; 10g coriander; 2½ tbsp vegetable oil; 250g cherry tomatoes; 500ml vegetable stock; 450g broccoli; 200g paneer cheese; salt&pepper.

INSTRUCTION

  1. Blitz the onion, garlic, garam masala, coriander stems, and a third of the coriander leaves with 1 tbsp of vegetable oil in a food processor until it forms a thick paste.
  2. Heat half a tbsp of oil in a large saucepan over medium heat and add the paste. Fry for 5 mins, stirring, adding a little water if it sticks.
  3. Add the cherry tomatoes (half finely chopped, half halved) and vegetable stock; cook for 5 minutes.
  4. Add the halved cherry tomatoes and cook for another 2 minutes—season with salt and pepper.
  5. Bring a separate pan of water to a boil and cook the broccoli for 3-4 minutes until tender.
  6. Heat 1 tbsp of vegetable oil in a frying pan over medium-high heat. Add the paneer and cook for 7-10 minutes, turning brown on all sides.
  7. Combine the paste, broccoli, and the remaining coriander.
