Green veggie soup with chickpeas

This hearty and nourishing green veggie soup with chickpeas is a perfect way to enjoy the goodness of greens and legumes. It’s simple to make, full of flavor, and packed with nutrients.

Ingredients:

2 tablespoons olive oil;1 onion, diced; 2 cloves garlic, minced; 2 carrots, diced;1 celery stalk, diced; 1 zucchini, diced; 2 cups vegetable broth; 2 cups cooked chickpeas; 1/2 teaspoon sea salt; 1/4 teaspoon ground black pepper; 2 cups baby spinach

Instructions:


  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrots, and celery and cook until softened, about 5 minutes.
  3. Add the zucchini and cook for another 2 minutes.
  4. Pour in the vegetable broth and bring it to a boil.
  5. Reduce the heat to low and add the chickpeas, salt, and black pepper.
  6. Simmer for 15 minutes.
  7. Add the spinach and cook for another 5 minutes.
  8. Season with salt and pepper and stir in lemon juice.
