Ingredients:
2 tablespoons olive oil;1 onion, diced; 2 cloves garlic, minced; 2 carrots, diced;1 celery stalk, diced; 1 zucchini, diced; 2 cups vegetable broth; 2 cups cooked chickpeas; 1/2 teaspoon sea salt; 1/4 teaspoon ground black pepper; 2 cups baby spinach
Instructions:

- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrots, and celery and cook until softened, about 5 minutes.
